Crocked Meat Loaf

While I'll admit that it's not all that hard to make a half decent meat loaf, cooking one in a crock pot just seems to free up your time to do other things. After all doing it in the oven can fluster some because you never know if it will be cooked enough in the center.

INGREDIENTS

  • 17 Ritz Crackers

  • 1 Small onion (finely chopped)

  • 2 Tbsp. finely minced green pepper

  • 1/4 Cup prepared chili sauce

  • 1/2 Cup milk

  • 2 Eggs (slightly beaten)

  • 3/4 Tsp. salt

  • 1/8 Tsp. pepper

  • 1 & 1/2 Lbs. lean ground beef

Crush crackers with rolling pin or blender until crumbled. In mixing bowl, combine crumbs with onion, green pepper, chili sauce, milk, eggs, salt, and pepper. Mix in ground beef. Form into 6 or 7 inch round loaf. Place in crock pot. Cover and cook on low for 6 to 8 hours or until done.

I like this recipe a lot. I just made a soup via crock pot, and I realize better tasting food is the result of slow cooking. I usually love meatloaf, so I know that this one taste lovely.

Glad you like it. You are right about slow cooking making a more tender meat. Another trick when it comes to cooking tender meat. Put it in the oven when it's frozen and cook it slowly for 3 to 5 hours.
